There are a number of levels which this interpretation really works for me. I like the thought of the hidden pentacle to be revealed if one cut open apple. If Aces are seeds, the ace of pentacles contains one right in the heart of that apple held aloft.
I don’t have the Judaic scholarship to speak to that perspective, but in the Christian perspective I was familiar with growing up, this had echos of Adam and the apple. Pentacles pertain to material world, and the “seed of material/wordly things” could be seen as this fruit from the tree of knowledge.
